Water can exist as a solid (ice), liquid (water) or gas (vapour or gas). Adding heat can cause ice (a solid) to melt to form water (a liquid). Removing heat causes water (a liquid) to freeze to form ice (a solid). When water changes to a solid or a gas, we say it changes to a different state of matter.
Definition of Boiling Point. The temperature at which a liquid boils and turns into a gas. The boiling point temperature will be lower if the atmospheric pressure is decreased. For example the boiling point of pure water at standard atmospheric pressure (or sea level) is 100°C (212°F) while at 10,000 feet (3,048m) it is 90.39° C (194.7°F).
Liquids boil when their vapor pressure is equal to the pressure exerted on the liquid by its surroundings. The normal boiling point of water is 100 o C because this is the temperature at which the vapor pressure of water is 760 mmHg, or 1 atm.
